This January was pretty low-key, as evidenced by the only foodie-related picture I could find on my phone this month (Bulk Barn is now selling Sweetapolita sprinkles in bulk!). As a result, I will mostly be filing a report of recipes I cooked at home this month that I really liked:
- I’ve made this Broccoli Cheddar Soup a few times before, and it’s an absolute winner.
- I’m newly obsessed with this Panko Crusted Baked Tilapia from my friends at How To Eat. I paired it with both this Broccoli Crack and regular roasted brussels sprouts, which can roast at the same time as the fish, making it into a quick complete meal.
- This Butternut Squash, Caramelized Onion and Black Bean Quesadilla is a vegetarian winner.
- I had this recipe for Walnut Chorizo Tacos with Pineapple Salsa bookmarked for ages and finally made it. The only thing I would potentially change next time is to use crispy taco shells for a little crunch.
- My love: Everyday Meatballs + Kale Caesar.
- I’m not ashamed of a few shortcuts, and if you can pick up a rotisserie chicken and a bag of coleslaw mix, you’re like 85% of the way towards this Thai Crunch Salad (I use this peanut dressing instead though).
- Still working my way to loving cauliflower rice, but this Sheetpan Sausage & Peppers is so quick and easy.
- I used to make this on repeat and I don’t know why I haven’t made it in years, but I’m back to being all in on this Shrimp Noodle Bowl.
- Still loving the Sweet Potato Falafel in this post, with some Tahini Dipping Sauce on the side.
- As always, I made our traditional feast of Beef Bourguignon & Mashed Potatoes for this year’s Golden Globes feast.
Other non-foodie things I was obsessed with this month:
- I was determined to read more than one book this January, which is a roadblock I can’t seem to get around for some reason, and I did it! I read Becoming by Michelle Obama and if you know me in real life, you’ve already heard about why I loved it so much! The other book was Educated by Tara Westover. So many people recommended this to me, and while some of it was hard to read (i.e. the numerous stories of injuries in the scrapyard), overall it was very interesting. I’d recommend both of these!
- It’s Oscar movie season! This month, Kristine and I went to see Vice and If Beale Street Could Talk, plus I watched BlacKkKlansman on demand at home. Obviously none of them were as good as my #1: A Star is Born.
