Ultimate S'mores Cake

I may have had a bit of an influence on my niece when it came to her birthday cake selection this year. To be fair, we did talk about a few other options, including a Lemon Meringue Mega Cake, so that shows you right there I was trying to be unbiased (I hate citrus desserts!). In the end, I texted her a link to Cake By Courtney’s Ultimate S’mores Cake and that sealed the deal. This cake might look familiar, as Courtney’s recipe is based on Sweetapolita’s Campfire Cake which I’ve made before, but it has enough upgrades to warrant a new post. Here’s how I made it:

Stacking up layers

  • Mixed up a huge batch of graham cracker crust and pressed it across the bottom of three 8″ pans, baked it and let it cool
  • Made the quickest and easiest chocolate cake recipe, and poured it directly on top of the cooled graham cracker crusts and baked them
  • Stacked up the layers with toasted marshmallow frosting
  • Covered the entire cake in chocolate buttercream
  • Added a dark chocolate drip with a squeeze bottle and let it set overnight
  • Finished it with a batch of homemade marshmallow and toasted it with my kitchen torch

Candles

I worked on the cake over the course of the weekend, making the cake layers on Friday night, working on the frostings and drip on Saturday, and finishing with the marshmallow topping on Sunday morning before going to the party. Needless to say this was a huge hit, and I was LOVING the graham cracker crust on each layer of the cake. It’s normally so hard to get the graham component to come through in a s’mores recipe, and this was the best addition. I can’t believe Charlotte is 12! We’ve come a long way since Elmo and Blue’s Clues!
