Aperol Spritz Slushie

Last Summer, I was obsessed with Frosé, and documented my trials extensively here. By the time I figured out the best way to make it, Summer was over and I had no use for my new skills.

Well, Summer’s back in full effect and I only have one goal*: TURN EVERY COCKTAIL INTO A SLUSHIE.

First up: Aperol Spritz! I was introduced to this cocktail a couple of years ago on the Gusto 101 rooftop patio, when I arrived to meet my friend Krishna for brunch and she was sipping one in the sunshine. I tried it and fell in love immediately. I really don’t like sugary sweet drinks, so I felt like it was made for me. It’s the most simple mixture of prosecco (or any sparkling wine, if you don’t care about it being official), Aperol (which I already own from making these) and sparkling water, which I always have. It’s super refreshing, and a little bit bitter, which I love.

All you have to do to slush-ify these is to add the ingredients to a large resealable plastic bag (or tupperware container with a lid), swish them around to combine, and freeze overnight. When you’re ready to serve, just scoop the slushie mixture into glasses, add a cute straw and an orange slice. You can see from the first picture up top just how frozen it is when you first take it out, and then it slowly starts to melt into something like this:

I’m pretty excited for the summer of slushies!

*Not true. I have a Summer Bucket List on-the-go, which includes such lofty goals as: go on a hike // can something (i.e. pickles or blueberry jam) // have my nieces and nephews over for a sleepover.

Ingredients

  • 1/2 cup prosecco
  • 1/3 cup Aperol
  • 1/4 cup sparkling water

+ orange slices for garnish

Directions

  1. In a large resealable plastic bag (or tupperware container with a lid) combine the prosecco, Aperol and sparking water and swish around to combine. Freeze overnight. This is probably enough for two drinks, so double or triple if you need more!
