Frozen Watermelon Mojito

Kristine and I tried to squeeze* in one more pool day yesterday before this Summer wraps up. I blended up these Frozen Watermelon Mojitos at home, then (safely) raced over to my parents’ backyard before they could melt. We sipped on these, caught up and went for a quick dip. Even that little bee in the pic tried to get in on the fun!

This is a really quick cocktail to mix up, but just requires a little bit of advance planning to have your watermelon cubed and frozen beforehand. Then it gets blended with lime juice, sugar and rum and you’re in business. Summer in a glass!

*What’s the past tense of squeeze? Squoze?

Frozen Watermelon Mojitos

Yield: 2 cocktails

Ingredients

  • 4 cups cubed watermelon (1″ cubes)
  • 1/2 cup fresh lime juice, plus wedges for serving
  • 2 tbsp sugar
  • 3-4 oz white rum
  • leaves from 1 or 2 springs of fresh mint

Directions

  1. Line a cutting board or baking sheet (that will fit in your freezer) with plastic wrap or parchment paper. Spread out the watermelon cubes on it and place in the freezer until frozen.
  2. When you’re ready to blend up your mojitos, add the lime juice and sugar to a blender (or a large jug that your immersion blender fits in, which is what I do) and stir a bit until the sugar dissolves. Add the frozen watermelon cubes and rum and blend up until thick. Taste and add a bit more sugar if it needs it. Add the mint and blend briefly, just so that the mint is chopped up but not totally blended in.
  3. Pour into glasses and add a lime wedge and cute straw.
