Caramel Crunch

With every week that went by this month, I felt better and I’m now pretty much back to normal, just with far less Doritos in my life. Here’s what I was up to:

  • My new co-worker Georgia turned 30, and I told her she could have any treat she wanted. She asked if I knew what a Caramel Crunch Cake was, and I was like oh, I sure do. I packed up the meringues, a bowl of whipped cream, a squeeze bottle of butterscotch sauce and some sprinkles, and assembled this masterpiece in my cubicle. She was so happy and everyone loved it!
  • I made these Carrot Cake Breakfast Cookies last year when I got the Cookie + Kate cookbook, but I forgot how good they were (or I’m just obsessed with anything resembling a treat right now). I also made the Spinach & Artichoke Quiche (with Almond Flour Crust), Blueberry Maple Muffins, and Scrambled Egg Toast with Burst Cherry Tomatoes from the C+K cookbook this month.
  • Lydia came over to watch the fence-jumping episode of The Bachelor, and I made us this simple 5-Ingredient Green Curry. It was good, but I made it the night before we ate it (trying to be prepared) and the broccoli really fell apart upon re-heating. Learn from my mistakes.
  • Sarah and I went on a Scarborough adventure to Mantra, and it was amazing. I was still being a little cautious with my eating early in the month, so I need to go back and try more. Favourite of the night was the Butter Chicken Bao. Amazing!
  • I took two lunchtime trips up to Mary Be Kitchen (Nicole joined me for one), and had the Ginger Scallion Tofu both times, and it was so good. They just switched to their Spring menu, so I think I have to get up there again.
  • These Raw Chocolate Snack Bars just filled a void in my life this month that’s normally stuffed with Kit Kats and Mini Eggs and they hit the spot.
  • Heather and I went up to Heart Sushi and I devoured everything I could and had a great time, and didn’t miss the tempura (too much).
  • I made Smitten’s Extra-Billowy Dutch Baby Pancake (half the recipe in a 8″ cake pan) and it was so good, I’m questioning why I would ever make regular pancakes again?

Other non-foodie things I was obsessed with this month:

  • I read a few excellent books this month. The first is The Seven Husbands of Evelyn Hugo, which I just couldn’t get enough of – lots of old-Hollywood glamour and intrigue. The second is On The Come Up, Angie Thomas’ follow-up to The Hate U Give, which I really liked (and is already being made into a movie). The third was Money Diaries, and I don’t think I’ve even expressed my love/obsession with this feature on Refinery 29 here before. I discovered it at some point in 2018, and it’s inspired me to sort out a lot in my financial life and examine a lot of my spending habits. The book is aimed more at young millennials, but still has a lot of useful tips and advice. Highly recommend all three of these reads!
  • Queer Eye is BACK and I watched all the new episodes in one weekend, and cried at each one. This season is the best one so far, and each episode is so great. If you haven’t watched it yet, start at Season 3 and work backward. I just love it so much.
  • Your Marvel Fangirls (me & Kristine) were out on opening weekend to see Captain Marvel, and while I don’t think it cracks my Top 5 Marvel Movies (which would be: 1. Captain America: Civil War 2. Black Panther 3. Iron Man 4. The Avengers 5. Avengers: Infinity War) it was still enjoyable primarily due to a) Jude Law b) the ’90s soundtrack.
