Yesterday was my niece’s 11th birthday, and her birthday request was a Reese’s Cake she saw online (shout out Lizzy T). I took that idea and ran with it, using inspiration from Yo’s Chocolate Peanut Butter Mega Cake to create this beauty. Here’s how I did it:
- Baked up the quickest and easiest Chocolate Cake recipe from Sweetapolita in three 8″ pans
- Doubled this recipe for Yo’s Peanut Butter Blondies and baked in two 8″ pans
- Stacked up the layers alternating between a cake layer and a blondie layer, and filled with Prairie Girl’s peanut butter cream cheese frosting (I should really post this recipe, it’s amazing. I used 3/4 of the recipe)
- Frosted the outside with a batch of Baked’s chocolate cream cheese frosting
- Used a large open star tip to pipe on bursts of peanut butter frosting
- Filled the inside with halved mini Reese Peanut Butter Cups
I know I say this every time, but this cake was a huge hit, and I loved the look of the alternating layers inside! My brother had to cut slices in half horizontally because they were so tall, but I just loved the drama of the height. Happy Birthday Charlotte!
