When Claire posted her recipe for English Muffins back in the summer, I borrowed my brother’s cast-iron skillet so I could give them a try. This was perfect timing, because he was about to embark on a kitchen reno, so there wouldn’t be any cooking happening over there for a while.

But then I kept finding things I wanted to try making in it, like Alison Roman’s pancakes and this Crispy Cheesy Pan Pizza (that Claire also made on an episode of Dessert People). That one was so good, I had to make it twice. By the time I was ready to give the skillet back, I probably had it for about three months. Oops.

Well this is how I said “sorry”; I returned it with this Peanut Butter Pretzel Cookie baked inside. My nephew immediately cut a slice, took a big bite and gave it two thumbs up. This bakes up super thick and chewy and just like these cookies, could also be customized with whatever add-ins you like. You can cut it into slices/wedges or (in a post-COVID, germ sharing world) set it in the middle of the table with warm scoops of ice cream and a bunch of spoons.

I think in 2022 it’ll be time for me to invest in my own cast-iron skillet… I see more pizza and smash burgers in my future!

Peanut Butter Pretzel Skillet Cookie

Ingredients

  • 1 cup (2 sticks) butter, room temperature
  • 1 cup brown sugar
  • 1/3 cup sugar
  • 2 eggs
  • 1 1/2 cups peanut butter
  • 2 tsp vanilla
  • 2 1/2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup chocolate chips
  • 1 cup Reese’s Pieces
  • 1 cup pretzel pieces

Directions

  1. Preheat oven to 350o and get out your cast iron skillet. If it’s seasoned correctly, you don’t need to do anything to it (like oil or butter it). If you don’t have a skillet, you can also bake this in a cake pan – in that case you should line it with parchment paper and spray with non-stick spray.
  2. In a large bowl, cream together the butter, brown sugar and sugar until light and fluffy. Add the eggs and mix again.
  3. Add the peanut butter and vanilla and mix well until combined.
  4. Add the flour, baking soda and salt and mix until no flour is visable.
  5. Stir in the chocolate chips, Reese’s Pieces and pretzel pieces.
  6. Add cookie dough to the skillet and press into an even layer. Add a few more chocolate chips, Reese’s Pieces and whole pretzels to the top.
  7. Bake for 30-35 minutes until edges are turning golden brown.
