I’m obsessed with these energy bites – they are PERFECT. I’ve tried so many other recipes over the years (and have been listing the ones I’ve made this year in my monthly recaps), but this is by far my favourite. It uses ingredients I pretty much always have at home (maybe not the mini chocolate chips, but you could use regular ones instead) and DOESN’T use the food processor (which I hate cleaning) to grind any oats, nuts or dates.

Shout out to my old FBC friend Jan for responding to my DM right away, when I realized her blog isn’t online anymore and I needed this recipe! I’m promptly logging it here so I can keep making these all the time.

I love these for a quick breakfast to grab while I’m running out the door (something that actually happens now after two years stuck at home), or the absolute best afternoon snack.

Peanut Butter Oatmeal Energy Bites

Ingredients

  • 1 cup natural peanut butter (smooth or crunchy, I always have smooth)
  • 1/2 cup honey
  • 2 tbsp ground flax
  • 2 tbsp chia seeds
  • 2 tbsp hemp hearts
  • 1/4 tsp fine sea salt or kosher salt
  • 2 cups rolled oats
  • 1/2 cup mini chocolate chips

Directions

  1. In a large bowl, whisk together the peanut butter and honey. Stir in the flax, chia seeds, hemp hearts and salt.
  2. Add the oats and mini chocolate chips, and stir until they’re evenly coated in the peanut butter mixture.
  3. Roll into balls a little bit smaller than a golf ball and store in the fridge.
