Yesterday my girls came over to watch the Emmys, and I cooked up a last-gasp summer feast for us, which I will document here this week. We started off with these Rosé Aperol Spritzes, which I legitimately bought the passion fruit juice for LAST SUMMER and just never got around to making. This is a super fresh and bright version of a regular Aperol Spritz, made with the additions of passion fruit juice, fresh lime juice and just a bit of sugar. Perfect way to close out summer.
Rosé Aperol Spritz

Ingredients
- 3/4 cup passion fruit juice
- 1/4 cup Aperol
- 1/4 cup fresh lime juice
- 4 tsp sugar
- 1 bottle (750mL) sparkling rosé
Directions
- In a pitcher, stir together the passion fruit juice, Aperol, lime juice and sugar until the sugar is dissolved. Add the rosé and stir gently to combine. Serve over ice.
