Strawberry Rhubarb Sangria

Alright, I had one new strawberry/rhubarb recipe that I wanted to make this year, and it’s this sangria. Was I mostly motivated by these super cute cups I bought at Lionheart Prints in New Orleans? Yes indeed!

My old boss was having a bunch of people over to his new condo for drinks last week, and I thought this would be perfect to sip on the balcony. It took a bit of prep, and my co-worker made fun of me and said this was way too much work, but I like doing stuff like this! So much more fun than just bringing a bottle of wine. Here’s what I did:

  • Made a strawberry rhubarb simple syrup the night before, let it cool, and poured it into a mason jar with a lid
  • Sliced up a few strawberries and packed them in a tupperware container
  • Packed a tote with a pitcher, my cute glasses, plus the syrup and fruit containers
  • Picked up a bottle of rosé and sparkling water on the way to the party

Balcony Sangria

When I got there, all I had to do was combine everything together and add a bunch of ice. It was a hit! The only problem was when a few people thought my glasses were disposable and were like – oh you wanted to save these? – when they saw the look on my face when they were making moves for the trash. I safely rescued them all and they’ve been washed and stowed away for the next party.

Strawberry Rhubarb Rosé Sangria

Ingredients

  • 2/3 cup sugar
  • 2/3 cup water
  • 1 1/2 cups chopped rhubarb
  • 1 cup chopped strawberries
  • 2 tbsp lemon juice
  • 1 bottle chilled rosé
  • 1 cup sparking water

+ sliced strawberries for garnish

Directions

  1. In a medium saucepan, add the sugar, water, rhubarb and strawberries and bring to a boil over medium-high heat. Lower the heat to medium, and let simmer for 10 minutes, stirring every couple of minutes.
  2. Strain fruit mixture, pressing on the fruit to extract all the syrup. Add the lemon juice to the syrup and stir. Chill until it’s time to serve. This can be done a few days in advance.
  3. When you’re ready to serve, add the fruit syrup, rosé, sparkling water and lots of ice to a big picture. Pour into cups, and add a few sliced strawberries for garnish.
