I love a carby breakfast baked good, and Claire’s got one for us that you can actually feel pretty good about eating. Her Seedy Maple Breakfast Muffins are full of healthy ingredients like whole-wheat flour, greek yogurt, coconut oil, ground flax and blueberries.
This is a really simple recipe to mix up, and you just need two bowls, a whisk and a spatula. You also stir together a combination of seeds (sunflower, pumpkin, poppy and chia) and raw sugar to sprinkle on for a crunchy topping.
These were really good, and I can see myself making a batch and freezing them, so I can pop them out when I need a quick breakfast (like when I *finally* get to go back to the office!).

Note: I ordered a gigantic 3lb box of Diamond Crystal Kosher Salt online, but if you don’t have it, just use regular salt and cut the measurement in half for these recipes.
