I remember thinking last year that it was such a strange and sad Mother’s Day. It was a rainy day and I dropped off this cake and a card on my Mom’s doorstep, and then we had a quick driveway visit before I went back home and watched Netflix movies all afternoon.

This year was a bit better, even though we’re still locked down in Ontario and nothing has opened back up. Once again I dropped off a cake to my Mom, but I also brought us Starbucks and we went for a long walk around the neighbourhood, because it was a nice sunny day.

The cake I brought over was Claire’s Poppy Seed Almond Cake. Claire tells us that this is her most beloved, prized family recipe, and her mom made it all the time while she was growing up. It’s super easy to mix together, is very hydrated and absolutely delicious. As Claire says, the primary flavour comes from almond extract, so if you’re not into that, try another recipe. My Mom loves it though, so I knew this was the perfect cake for her.

Once the cake comes out of the pan (hopefully in one piece!), it gets brushed with a glaze made from icing sugar, fresh orange juice, almond extract and a little bit of melted butter.

I think this is my favourite of all the Dessert Person recipes I’ve made so far!

Note: I ordered a gigantic 3lb box of Diamond Crystal Kosher Salt online, but if you don’t have it, just use regular salt and cut the measurement in half for these recipes.
