The human garbage disposal has left the building! Yes, it’s true, my co-worker Barry – the bottomless pit/treat monster – has moved on to another company. Luckily he’s only going to be about two blocks away, but still, it’s sad to see him go.
In honour of his last week, I thought it would be fitting to clean out my baking cupboard and use up a bunch of old stuff, as we all know Barry will eat anything. This included the following: marshmallows rapidly going stale, half a bag of Oreos that I believe were purchased in December, various half-full bags of nuts/chocolate chips/butterscotch chips/coconut and finally 3/4 of a can of sweetened condensed milk sitting in the fridge for an undetermined period of time.
Here was the run-down for the week. I made half batches of all the cookies, and Barry was on a sugar-high for the whole week. In a new twist, he even shared!
Monday: Rocky Road Brownies. These brownies used up some marshmallows and a half bag of walnuts I found deep in my cupboard. The base is a quick recipe that uses cocoa powder instead of chocolate. These were great; very s’moresy.
Tuesday: Double Fudge Oreo Crunch Cookies. I was really surprised how much I liked these! They reminded me of the Oreo-stuffed cookies, because you get a bit of that crunch. I used up some of the old Oreos, and a bag of chocolate chips that was starting to turn gray.
Wednesday: Peanut Butter Butterscotch Chippers. For some odd reason, I had two opened bags of butterscotch chips and two half-full jars of peanut butter in my kitchen, so these cookies were meant to be. I found that I could only taste the butterscotch when they were warm out of the oven, but the next day could only taste the peanut butter.
Thursday: Cookies & Cream Cookies. These were my least favourite of the week, but everyone loved them. I found the cookie dough was very plain, maybe because it uses only white sugar instead of brown sugar. In any case, I used up the last of the Oreos, and gained more space in my cupboard. (No picture, oops).
Friday: Goodbye Dollies. Technically these are called Hello Dollies, but I changed the name for Barry’s departure (h/t Jill, it was her joke!). These are my most favourite treat of ALL TIME. They are also the best clean out the cupboard treat, which is why I left them until last. Once you have your graham cracker crust pressed into your baking dish (follow the recipe on the box), you can pour anything on top. In this case, on went the rest of the stale marshmallows, an old bag of coconut, the rest of the butterscotch chips, chocolate chips and finally some pecans I found in the fridge. Then you pour over a can of sweetened condensed milk and bake until everything is ugly and delicious (350° for about 25 minutes). And I thought blondies were the fugliest treat!

So farewell to Barry, who has made it quite clear that’s only up the street, and will happily accept treat deliveries at any time!
Bonus: This is a perfect example of something I would drop off on Barry’s desk for him to dispose of. This was supposed to be a s’mores cookie, but the dough was too dry, it didn’t spread and the marshmallows slid right off.
