Yup, you know it, back with s’more s’mores! I’ve had these bookmarked since November and I can’t believe it’s taken me this long to make them, but I’m also glad I saved them for summer!

I also tried making homemade graham crackers last month, and was really disappointed with the way they turned out. I don’t think I rolled out the dough enough, because the cookies had a kind of chewy texture, but I also wasn’t happy with the flavour. They tasted more like digestive cookies to me, which is obviously not what I was going for. We tried to make s’mores with them, but I wasn’t a fan. I gave them all to Alexis, and she texted me the next day to say she ate them all!

These cookies are much, much better in my opinion. They’re soft and chewy and essentially portable s’mores. I brought these to Kristine’s nephew’s birthday party and they were a smash! Next up: S’mores Pie!

S’mores Cookies

Ingredients

1/2 cup rolled oats

1 cup flour

1 cup whole wheat flour

3/4 tsp cinnamon (I left this out)

1/2 tsp baking soda

1/2 tsp salt

1 cup (2 sticks) butter, room temperature

3/4 cup brown sugar

1 large egg

a big huge bar of milk chocolate, cut into squares

a bunch of big marshmallows, cut in half

Directions

  1. Preheat oven to 350 and line two cookie sheets with parchment paper.
  2. In the food processor, pulse oats until finely ground. Add flours, cinnamon (if you want), baking soda and salt, and pulse a few times to combine.
  3. In a large bowl, beat butter and sugar until light and fluffy, then add egg and beat again. Add dry ingredients and mix until just combined.
  4. Roll tablespoons of dough into balls (smaller is definitely better because these cookies will spread out a lot). Press a square of chocolate into each ball to flatten it a bit. Bake for 11-13 minutes.
  5. Switch the oven to the broiler setting and move a rack to the very top.
  6. Put a marshmallow on top of each cookie, and one sheet at a time, broil until the marshmallow gets toasty brown. This will only take about a minute, so don’t walk away from the oven or you may light your kitchen on fire.
