Goat Cheese Spread

Back in the early years of Planet Byn, I used to blog extensively about my Golden Globes and Oscar meals. I haven’t really done that lately, especially since my friends have been requesting the same dinner for the past two or three years now.

This past Oscar Sunday, I actually remembered to take pictures of everything, and as a bonus, made a few new things that I loved and are worth documenting here.

First up is this simple, yet totally addictive, Goat Cheese Spread with Garlic & Fresh Herbs. This is perfect because I like to set out something relatively light for everyone to snack on while the red carpet is on, but not get super full. This spread is just a mixture of goat cheese, garlic, olive oil, fresh herbs of your choice (I used rosemary and basil), salt and pepper, but it’s super flavourful. I bought a couple of packages of different crackers to go with it, and then just added a bit of fresh fruit for colour. So easy and so delicious. I think this is my go-to app from now on.

Goat Cheese Spread with Garlic & Fresh Herbs

Ingredients

  • 8 oz goat cheese, softened slightly by leaving at room temperature for about half an hour
  • 1/4 cup chopped fresh herbs (i.e. rosemary, basil, chives, parsley)
  • 2 tbsp olive oil
  • 3 cloves garlic, grated with a microplane
  • 1/2 tsp ground black pepper
  • coarse salt

Directions

  1. In a small bowl, mix together the goat cheese, herbs, olive oil, garlic and pepper. I used an electric mixture to make sure it was perfectly smooth. Add coarse salt to taste. Chill until ready to serve.
