Today I hit the wall. The novelty of the Elimination Challenge has definitely worn off. I felt grumpy, tired, and very sad about how I would be spending Pancake Tuesday.  I thought about how there would be no butter slathered, nor maple syrup poured over my pancakes and it almost brought a tear to my eye.  As I wandered around Whole Foods after work looking for millet flour (what?), I really just thought about forgetting the whole thing.

Luckily two things saved the night. First, I ran into Lydia, Andrew and Ethan doing some shopping of their own (Ethan started crying because he was hungry; I could relate), and then I found a Gluten-Free/Dairy-Free/Egg Free Pancake Mix to make my life easier. I already checked with Aoife that turkey bacon was on the okay list, and thus, an Elimination Pancake Tuesday was born.

So how did the pancakes taste? Uh, no comment. They made my teeth feel weird! I don’t think I would make them again. This is one food group where gluten, dairy and eggs are just meant to be. Turkey bacon was good though ;o) Is it Sunday yet?
