I first made these fudgesicles all the way back in 2010! But in the spirit of Summer and Baked Sunday Mornings, I gave them another shot this week. This is a basically a frozen pudding pop, with the addition of some espresso powder. I was curious to see what would happen if I substituted the whipping cream in these for coconut milk, like in the vegan version of these also in the archives. They turned out okay, but I think they could have been a touch sweeter, and definitely could have used a big pinch of salt, since flavours are muted when frozen. In any case, a nice treat to have stashed in the freezer.
