I have had the best luck with restaurants in the Palazzo hotel. Last year, my besties and I dined at Lavo for my 30th birthday, and we had just the most amazing dinner there, followed by free drinks in the lounge, and dancing upstairs in the club.

On this trip to Vegas, Kristine and I went to Dos Caminos, mostly because you always hear of Rihanna and other celebs stumbling out of the one in New York. But we both also love Mexican, so after having already tried Isla’s Mexican Kitchen in Treasure Island, and Border Grill in Mandalay Bay (where we stayed for my birthday trip last year), we needed something new.

So Dos Caminos rocked my world. I love when I try something in a restaurant that I usually make at home, and discover how it could be made even better. In this case, the guacamole. So simple right? No. After we ordered it, the waitress asked if we wanted it mild, medium or hot. Say what? How did I never consider this an option? We went for medium, just to check it out, it was honestly the best guacamole I have ever had (sorry Nicole!). From now on, I will definitely be adding some hot sauce or cayenne pepper to my guac when I make it at home. The spicyness was just perfect against the cool, creamy avocado.  You also get a trio of salsas to snack on, and I can’t remember exactly what they were. One was definitely a tomatillo thing, but I’m not sure about the other two. Kristine will update in the comments if she can remember.

For dinner, Kristine had cute little mini tacos, filled with carnitas (slow roasted pork), serrano chile salsa and cotija cheese.

 

I had the Dos Enchiladas which were corn tortillas stuffed with roasted chicken and mexican cheese and two sauces: mole poblano and tomatillo verde. Fantastic!

 

I also ordered a side of sautéed sweet plantains because I am obsessed with plantains. They were like candy and I seriously could have eaten the entire plate of them.

Dos Caminos is a must-eat if you’re in Vegas and into Mexican. Just ignore the wall full of skulls.
