When you invite people over at 5am to watch the Royal Wedding, you better provide some good eats to make the visit worthwhile. Yes, I am one of those people who booked April 29th off work way back in November when Prince William & Kate’s wedding date was announced. My Mom, her friend Janet, and Kristine came over and we all wore tiaras from the dollar store as we watched William & Kate tie the knot 🙂

Using this amazing post as inspiration, I planned out an easy breakfast that could be prepared almost all the way in advance, as waking up at 4am is early enough for me! I made my scones the weekend before the wedding and flash froze them, so the only thing I had to do on Friday morning was put them on a baking sheet, brush the tops with cream, sprinkle with raw sugar and pop into the oven. I put out some great jams from The Farmer’s Daughter in Huntsville (raspberry mandarin & strawberry lavender), and the leftover lemon curd from these cookies, as well as some whipped cream (by hand so I didn’t wake my neighbours with my loud mixer). 

I washed and cut a big bowl of berries the night before and made a batch of granola, to go with some vanilla yogurt. I also made a few batches of muffins here and there throughout the month and just popped them into the freezer: banana chocolate chip (I really need to post this recipe), lemon cranberry and apple crumble. And because I just could not get the idea out of my head, some sugar cookies with royal icing. Get it? ROYAL icing? It’s been almost a year since my last attempt, and I was excited to try again. I knew exactly what I wanted to do, having seen a similar cookie on Annie’s Facebook page. I think I finally know the key to success: planning and patience. I had all my little tupperware containers ready with lids, my squeeze bottles and piping bags organized, and my gel food colourings at the ready. I also only made about a dozen cookies, because I’ve learned my attention span with these things does not last long.  So many other sites explain the method behind the madness better, so I’ll leave it to them (also, if you think these cookies look good, you need to check out Bake at 350). One key piece of info I did pick up is that for outlining and piping detail, the icing should be the consistency of toothpaste – really quite thick. I know the first time I tried it, mine was way too thin.  I loved the way they turned out, and they tasted great too!
