I’m about halfway through my re-introduction phase, and all is well so far! I’ve still been cooking a lot, but nothing really that exciting (until I got to tomatoes!). I thought I’d just post some links to some recipes I tried throughout the first couple weeks:

Dairy: Pioneer Woman’s Pasta with Bacon & Mushrooms. Used turkey bacon, and left out the mushrooms. This was good, just not my thing. Reminded me why I never order anything with alfredo sauce. Made me miss tomatoes even more.
 
– My other dairy dinner was just tacos with turkey, and a bit of cheddar and sour cream. Yummy! I missed tacos.
 
Eggs: Smitten Kitchen’s Leek & Swiss Chard Tart . Made this without the crust and subbed in spinach for the chard. Reminded me why I hate thyme.
 
Also from the SK, Ginger Fried Rice.  Too greasy for me, or I just used too much oil. Didn’t really like the crispy ginger bits sprinkled on top.
Citrus: Ate an orange, drank some OJ :o)
 
Potatoes: Oven fries. Also, roasted some baby red potatoes with olive oil, salt, pepper, and rosemary. Ate them with Garlic Mustard Glazed Skewers. YUM.
 
Tomatoes: Barefoot Contessa’s Chicken Chili. This was the second tomato thing I made – the first was so good it will get it’s own post.
