I think the carby/bready recipes from Dessert Person have been my favourite so far. I loved the Soft & Crispy Focaccia and the Pecan Maple Sticky Buns; both were SO good (even if I was a little annoyed at Claire saying you need a stand mixer to make them). I was really excited when the video for Honey Tahini Challah popped up for a few reasons.

First of all, I’m still loving lengthy, multi-step baking projects these days. Secondly, I’ve never made challah before, and have always wanted to give it a try (especially the braiding!). Thirdly, Claire says this is an easy bread recipe for beginners that can be kneaded by hand! Hooray! Finally, I love tahini, so I was excited to see what this was all about.

You need the usual suspects to make this enriched bread (yeast, warm water, bread flour, eggs), and then Claire puts her own spin on it by also adding olive oil (for richness), honey (for sweetness) and tahini (for nuttiness). She says to try and use a good quality honey, like something you’d pick up from a farmer’s market, and not just the kind in the bear from the grocery store (oops, that’s what I used, but I did get some fancy honey recently so I want to make this again). The dough was super easy to mix up, just like she said, and I followed her method for braiding that she shows in the video.

My loaves turned out perfectly (if a little too bronzed on the ends). They were perfectly soft on the inside, and you can definitely taste the tahini and honey in the background (although subtle). This challah was good plain, toasted and of course made into French Toast. This is definitely my favourite Dessert Person recipe so far.
