In my office, people go bonkers for free food. There’s a certain group of people who will actually loiter outside conference rooms, waiting to pounce on leftovers from catered meetings. We’re talking soggy sandwiches from the deli downstairs, disgusting pasta salads, fruit picked over until there’s only honeydew melon left, and cookies that taste like cardboard.
So imagine how they react to an actual baked good that shows up in the office? Even something that takes 15 minutes to put together, the hardest part of which is cleaning the pot. You’d think they’ve never eaten a Rice Krispie Square in their entire lives.
Peanut Butter Rice Krispie Squares

Ingredients:
1/4 cup butter
1 package (10oz) marshmallows (minis will melt faster)
1/2 cup peanut butter
5 cups Rice Krispies
2 cups chocolate chips (I used half chocolate chips, half butterscotch chips, because Barry gave up chocolate for Lent)
Directions:
- Melt butter in a large saucepan.
- Add marshmallows, stir until melted, then add peanut butter until mixture is blended and smooth.
- Remove from heat, stir in Rice Krispies, and press into a 13×9″ pan.
- Melt chocolate chips (or butterscotch chips) in the microwave and spread to cover.
- Chill to set chocolate, slice and impress your co-workers.

March 8, 2010 9:40 pmewww.. nothing makes me feel more ill than seeing leftover cake or “pot luck” food from meetings and special events in the office… the worst part is that ppl in my dept usually let the food sit for days at a time until someone just can’t stand to look at it anymore. Even though i’m not a pb fan, those look good!

March 8, 2010 1:02 pmjust before reading this, i’d finished eating a sandwich and cookie leftover from a client meeting, LOL. for the record it wasn’t soggy (avocado, cucumber & alfalfa on ace bakery bread) and the cookie wasn’t so bad when microwaved 😛 when i got back to my desk i was offered yet another cookie that my co-worker had baked… gluten-free chocolate chip! so yeah, i’m totally one of those office food-hawks, haha.
