I enjoyed my Pink Lemonade Popsicles so much earlier this summer that I decided to try another ice pop recipe, and a boozy one at that. This popsicle is another simple mixture of just a handful of ingredients: fresh peaches, a bit of sugar and lemon juice and a cup of rosé. My only note is that I followed the original recipe’s instructions and didn’t peel my peaches, and while that does give the pops a cute speckled look, I didn’t love the little bits of peach peel while I was eating them.
So I might not have worked my way through all the rosé cocktails I wanted to make this summer, but at least I made a popsicle cocktail! A pop-tail?
Peach Rosé Popsicles

Ingredients
- 4 peaches, pitted and chopped (and peeled if you wish)
- 2 tbsp sugar
- 1 tbsp lemon juice
- 1 cup rosé wine
Directions
- Add the peaches, sugar and lemon juice to a large bowl (or blender) and use an immersion blender to purée until smooth. Stir in the rosé.
- Pour mixture in popsicle molds, and after about an hour (or whenever they’re halfway frozen) insert sticks. Freeze until solid.
