Last year, I made my best bud Max a Guinness Chocolate Cake with Bailey’s Buttercream for his birthday, and decorated it with Lucky Charms. He loved it, and told me how when he was growing up in Ireland he would beg his mom to buy Lucky Charms, but they were ridiculously expensive. I filed that little nugget away in my brain, and then when I saw these Lucky Charms cookies on The Palatable Life’s TikTok, I knew right away they’d be Max’s birthday treat for this year.

This is a basic chocolate chip cookie dough, with the addition of finely ground Lucky Charms cereal, and Lucky Charms marshmallows subbed in for the chocolate chips. The dough gets wrapped around a marshmallow for extra gooeyness, and topped with a few extra marshmallows for decoration.

I loved the way these turned out! Max did too, and even brought some on a family trip so they could all try some too. A hit!

Lucky Charms Cookies

Ingredients

  • 1/2 cup butter (1 stick), room temperature
  • 1/2 cup brown sugar
  • 1/4 cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 cup flour
  • 1 cup Lucky Charms cereal (just the cereal, take out the marshmallows), processed to a fine powder
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup Lucky Charms marshmallows
  • 4-5 marshmallows (not mini), torn in half

+ extra Lucky Charms marshmallows for garnish

Directions

  1. Preheat oven to 350 and line two cookie sheets with parchment paper.
  2. In a large bowl, cream together the butter, brown sugar and sugar until smooth and fluffy.
  3. Add the egg and vanilla and mix again until fully combined.
  4. Add the flour, Lucky Charms cereal powder, baking powder and salt, and mix until all the dry ingredients are incorporated. Stir in the Lucky Charms marshmallows.
  5. Use a 1/4 cup measuring cup to scoop out big portions of dough. Roll each into a ball, flatten it slightly, and place a marshmallow half on top (torn side facing up). Shape the cookie dough up and around the marshmallow, but still leaving it peeking through on top.
  6. Bake for 8-10 minutes until just starting to set. Once out of the oven, use a large round cookie cutter or a glass to shape the dough into nice circles. Press a few Lucky charms marshmallows over the top.
