I only left my home once per week in January to go grocery shopping, so there’s nothing that exciting to report this month. And while I didn’t bake anything (except these outstanding Cinnamon Rolls), I cooked every single meal for myself because I thought I could use a break from take-out (and didn’t take pictures of anything, oops). Because of that, we’ll skip straight to my cooking recap:
- Stuff I made from the archives: Kung Pao Chicken Lettuce Wraps, Santa Fe Salad, Kale Caesar, Sweet Potato, Kale & Peanut Soup, Turkey & Feta Stuffed Peppers, Butternut Squash & Caramelized Onion Galette (Yes, I know all these links are broken. Promise to get this fixed in 2022!)
- Some of my favourite go-to dishes: Butternut Squash Frittata, Rigatoni alla Vodka, Beef Kofta (from Oven to Table), Panko Crusted Salmon
- New things that I tried and liked: Harissa Chickpeas, Whole Wheat Pizza Dough, Chicken Parmesan Meatballs
- Homemade Snacks! (a new category for as long as I keep making them): Healthy Banana Muffins, Pecan Pie Energy Bites, Raw Chocolate Snack Bars, Banana Bread Muffin Tops
Other non-foodie things I was obsessed with this month:
- I spent most of January finishing Harry Potter & The Order of the Phoenix, and listening to the Binge Mode podcast about it, which answered many of my questions about this book, but still didn’t make me feel better about how damn long it is. After that I read The Midnight Library, which is basically about the existence of the multiverse which I am totally into.
- I continued to watch an extreme amount of TV this month, including: starting a couple of re-watches (ER & How I Met Your Mother), a bunch of trash (Too Hot Too Handle, The Bachelor, Joe Millionaire: For Richer or Poorer), a Sunday night anxiety attack (the new season of Euphoria), the cutest new comedy (Abbott Elementary), a fantastic documentary about Janet Jackson and Amy Schneider’s epic run on Jeopardy!
