For this post to work out, I need a little extra cooperation. You need to pretend it’s July 2nd, and you’re currently relaxing on your day off before heading back to work. Okay? Ready? Here we go…

Hope everybody had a great Canada Day yesterday! I hijacked my parents backyard for little pool party and it was a blast. There was lots of sunshine, swimming, watermelon, margaritas, guacamole and TREATS!

I made some s’mores squares (they weren’t that great, I won’t share the recipe…as you know we have high s’mores standards on Planet Byn), and a big, delicious strawberry shortcake, which is an automatic crowd-pleaser!

Since my most favourite gluten-free, dairy-free girl was also attending, of course I wanted to make a special treat she could have as well. This really couldn’t be easier, and it doesn’t really require a recipe, but this is the kind of thing I just never think of myself. Did you know bananas get all creamy and delicious when they’re frozen? They totally do! Even better when they’re dipped in chocolate and rolled in chopped honey-roasted peanuts! And it’s always more fun to eat food on a stick! See, look:

Frozen Chocolate Banana Pops

Yield: 16 mini banana pops, easily doubled for a crowd!

Ingredients

4 ripe bananas

1 bag (about 2 cups) chocolate chips

1/2 cup honey-roasted peanuts, chopped

***you could really do so much more here in lieu of peanuts: chopped M&Ms, coconut, rainbow sprinkles, etc.***

Directions

  1. Line a plate or baking sheet with parchment paper, and make sure it’ll fit in your freezer.
  2. Peel bananas and slice into quarters. Insert a popsicle stick almost all the way through, then place on the parchment paper. Freeze for a few hours or overnight.
  3. Melt the chocolate chips in the microwave, and pour the peanuts onto a plate.
  4. Dunk the bananas into the chocolate and then roll in the nuts (I just did one side). Place the dipped bananas back onto the parchment and stick back in the freezer until ready to serve. Take them out of the freezer for about 10 minutes or so, just so they soften a little bit.
