Last Oscar Dinner post – our treat for dessert. These were my first ever gluten-free baking success last year, and have been approved by both my g-f experts Aoife & Jill. They taste like marshmallows, are made of six easy ingredients, and best of all, only use one bowl! This weekend I also hit sugar on the elimination schedule (all the naughty things are last – sugar, red meat, caffeine, alcohol) so I got to eat some too :o)

Chocolate Chip Meringues

Ingredients:
 
2 egg whites, room temperature (take out of fridge about an hour before you make these)
1/4 tsp salt
1/8 tsp cream of tartar
1 tsp vanilla
1/2 cup sugar
1 cup (ish) mini chocolate chips
 
Directions:
  1. Preheat oven to 300°F.
  2. Beat egg whites until foamy. Add salt, cream of tartar and vanilla and beat mixture until it holds soft peaks.
  3. Add sugar gradually, beating the batter until it is stiff.
  4. Fold in chocolate chips.
  5. Spoon batter onto parchment lined baking sheets, and bake for 25 minutes until puffed and very lightly browned.
