Carrot Cake Slice

Well this was the weirdest Mother’s Day ever, right? What even is Mother’s Day if you can’t hug your mom? Instead of brunch, pedicures, musicals and other fun stuff we’ve done in previous years, this time I just dropped off a package of treats on my Mom’s door step and we had a 6 foot distance visit on the driveway, womp womp.

Of course, there still had to be a baked good of some sort, and I decided on this Carrot Cake Coffee Cake from Pinch of Yum. It’s like the Spring version of this Cinnamon Sugar Apple Cake:  a nice soft, cinnamon-y batter that you quickly mix up with a whisk in one bowl, plus a quick streusel that gets sprinkled overtop.

Because I’m paranoid, I actually brought over their cake unbaked, so my Mom could pop it in the oven (so this would kill any potential germs hanging around). It was a huge hit, and the rave reviews came in over text later that night! Obviously I made myself my own cake to snack on throughout the week.

I feel like this cake is only missing one thing, and it’s not nuts or raisins. How good would this be with a little cream cheese glaze drizzled overtop, for that classic carrot cake/cream cheese icing pairing?! Next time for sure!

Carrot Cake Coffee Cake

Ingredients

Cake

  • 1/2 cup (1 stick) butter, melted
  • 3/4 cup sugar
  • 2 eggs
  • 1 1/2 cups grated carrots (about 2 big carrots)
  • 1 cup flour
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • big pinch salt

Streusel

  • 1/4 cup (1/2 stick) butter, melted
  • 1/2 cup flour
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • big pinch salt

Directions

  1. Preheat the oven to 350° and line a 8″ or 9″ round cake pan or springform pan with parchment paper. Spray with non-stick spray.
  2. For the cake, whisk together the butter, sugar and eggs in a large bowl. Stir in the carrots.
  3. Whisk in the flour, cinnamon, baking soda and salt until just combined. Add the batter to your prepared pan and spread into an even layer with an offset spatula.
  4. For the streusel, mix all the ingredients together with a fork in a small bowl until it’s crumbly. Sprinkle the streusel over the cake.
  5. Bake for 30 minutes, or until a toothpick inserted into the centre comes out clean.
