Big changes in the Byn-osphere over the past few weeks. I left my department of almost ten years and transferred to a new one within the same company. It’s a pretty major life change for me. I’m doing something totally different, and I feel refreshed and excited for the next few years. 

Remember last year when my friend Barry got a new job? I sent him off with a farewell treat week, where I cleaned out my baking cupboard and make him all kinds of yummy cookies and squares. (Side note: I saw Barry last week and he told me he’s lost 10 lbs in the year since he left, with no other major changes to his routine, other than that he’s isn’t eating my treats on a regular basis. ha!)

I decided to conduct my own Farewell Tour of Treats for my co-workers, and brought in a treat everyday for my last week (there was also a one day interlude of Bran Muffins at the request of one co-worker who doesn’t like sweets).

So here with go with Day 1: Peanut Butter Slutty Brownies. First off, let me preface this by saying that the majority of these treats were made in the post-10pm timeslot of my life and photographed in a rush either then or at 8am before leaving for work. So the pictures are not the greatest. Ever since making Slutty Brownies, and their twin sister, Chaste Brownies, I’ve been thinking of a few other versions. So this is a peanut butter cousin, with peanut butter chocolate chip cookie dough on the bottom, Fudgee-Os in the middle, and brownies on top. I don’t think my co-workers knew what hit them!

Peanut Butter Slutty Brownies

Yield: 1 8×8 pan, I cut mine into 16 squares, for 16 happy co-workers

Ingredients

Peanut Butter Cookie Layer

1 cup creamy peanut butter

1/2 cup sugar

1/2 cup brown sugar

1 egg

1 tsp vanilla

1 1/4 cups flour

1/2 tsp baking powder

3/4 tsp baking soda

1/4 tsp salt

1 cup chocolate chips

Brownie Layer

1/2 cup + 2 tbsp butter (1 1/4 sticks)

1 1/4 cup sugar

3/4 cup cocoa

1/2 tsp salt

2 tsp vanilla

2 eggs

1/2 cup flour

+ a box of Fudgee-Os

Directions

  1. Line a square pan with tin foil, spray the foil with non-stick spray, and preheat the oven to 350.
  2. For peanut butter cookie dough layer, cream the peanut butter and sugars together in a medium sized bowl. Add the egg and vanilla and mix again. Add the flour, baking powder, baking soda and salt and stir to combine. Mix in the chocolate chips. Press the dough into an even layer in the pan.
  3. Add a layer of Fudgee-Os on top of the peanut butter cookie dough, and press in slightly.
  4. In a medium saucepan, melt the butter, then add the sugar and cocoa powder and whisk everything together to combine. Remove from heat and add salt, vanilla and eggs, and whisk in to combine. Add the flour and mix just until blended. Pour over the top of the Oreos.
  5. Bake for 35-45 minutes (mine took 45 minutes) until a toothpick inserted into the centre comes out clean.
