How have I owned the first Baked Cookbook for over 10 years without ever making this recipe? S’mores are one of my favourite things on earth, so I’m not quite sure how this oversight occurred. Well, maybe two small reasons: 1) there’s no photo of these in the book 2) it calls for peanuts, which I don’t like in my treats.
It was finally time to make these as we’re down to the FINAL FIVE recipes for Baked Sunday Mornings! They couldn’t be more quick and easy to pull together. First up, you mix graham cracker crumbs, brown sugar and melted butter together, press them into a 9×13″ pan and bake until golden brown. Next up you make a batch of chocolate ganache with an obscene amount of dark and milk chocolate, and then stir in mini marshmallows and toasted pecans (which I subbed in for the aforementioned peanuts). That mixture gets spread overtop the graham cracker crust and sprinkled with some more chopped, toasted pecans and that’s it!
These are SO good, and super dangerous to have just lying around my place. I tried hiding them from myself in the freezer, only to discover they taste amazing cold as well.
