Well, it couldn’t all be smooth sailing as we made it to the end of our Baked journey. This week’s recipe for Coconut Snowball Cupcakes was kind of a bust for me. I decided to tackle the Baked boys’ notoriously fussy cooked frosting one last time, even though it hasn’t worked for me in the past ten years. It ended up a soupy mess, as per my tradition (if you want to see what it should look like, check out Dafna’s gorgeous photos).
Aside from that, these cupcakes are a coconut lover’s dream. There’s shredded coconut in the cupcakes, they’re filled with coconut pastry cream, topped with coconut frosting, and sprinkled with more coconut. I brought them into work labelled “messy but good”, and then heard everyone’s opinions about how they love or hate coconut.
