Last Oscar Dinner post – our treat for dessert. These were my first ever gluten-free baking success last year, and have been approved by both my g-f experts Aoife & Jill. They taste like marshmallows, are made of six easy ingredients, and best of all, only use one bowl! This weekend I also hit sugar on the elimination schedule (all the naughty things are last – sugar, red meat, caffeine, alcohol) so I got to eat some too :o)
Chocolate Chip Meringues

Ingredients:
2 egg whites, room temperature (take out of fridge about an hour before you make these)
1/4 tsp salt
1/8 tsp cream of tartar
1 tsp vanilla
1/2 cup sugar
1 cup (ish) mini chocolate chips
Directions:
- Preheat oven to 300°F.
- Beat egg whites until foamy. Add salt, cream of tartar and vanilla and beat mixture until it holds soft peaks.
- Add sugar gradually, beating the batter until it is stiff.
- Fold in chocolate chips.
- Spoon batter onto parchment lined baking sheets, and bake for 25 minutes until puffed and very lightly browned.
