My not-so-little nephew turned SEVEN last week, and he requested Toronto Maple Leafs cookies for his family party. I knew I wasn’t going to have enough time during the week to go the whole royal icing route, so my brainstorm was to make the actual cookies bright blue and sandwich them together with faux-Oreo filling. Success!
Except for the part when John gave me the business about the cookies not saying Toronto Maple Leafs on them. womp womp. My sister-in-law came to the rescue with some little icing scribbler things, and I added TML to a few of the cookies.
I was really happy with the way they turned out; I think this is a good alternative to royal icing when you don’t have time. And you could always colour the filling too; like purple flower cookies with yellow icing inside. Just something for me to keep on file for the future!

Faux-Oreo Cookie Filling

Yield: ummm…I have no idea, sorry. But I doubled the recipe below and it was enough for two dozen (maybe more) sandwich cookies, plus I had some leftover
Ingredients
1/4 cup (1/2 stick) butter, room temperature
1/4 cup vegetable shortening
2 cups icing sugar
2 tsp vanilla
Directions
- Beat together the butter and shortening, then add the icing sugar and vanilla and blend until smooth and fluffy.
