Christmas in July! I read that somewhere this morning, and I realized I only had two days left to make this post relevant.
It’s no secret that I’m obsessed with Smitten Kitchen, and Nicole is hooked too. We decided to make ourselves a Christmas dinner last December, with everything from SK, and our only other rule was that it had to be recipes that neither of us had made before. A flurry of emails later, this is what we came up with:
Drinks:
Appetizers:
Phyllo Triangles stuffed with Spinach & Feta and Caramelized Onions & Goat Cheese
Dinner:
Spinach Salad (this was not from SK, just thrown together by us)
Dessert:
Dark Chocolate Tart with Gingersnap Crust
With a little planning, this worked out perfectly. I printed off all the recipes and made a grocery list in advance which Nicole edited for things she already had at home. I went to the LCBO in search of Marsala wine, and Nicole made sure she had all the right pans and a juicer and all that other stuff. We had a fun day bonding and grocery shopping and making this amazing feast. There were lots of leftovers for lunch the next day, and I brought in the rest of the tart for my co-workers to sample.
We’re trying to get it together for a summer version/SK on the grill type of thing, so I’ll keep you posted for that!
