Here’s a little peek into my favourite spot to spend a sunny summer afternoon. I love hanging out by the pool in my parents’ backyard and all I need is a fun summer book, a thick application of sunscreen and sometimes a bright, fresh cocktail as a treat. On this day my Mom and I read our girlie books (Jennifer Weiner’s The Next Best Thing & Emily Giffin’s Where We Belong) and sipped on these margaritas made with fresh peaches.
When I tried to make rhubarb margaritas at the beginning of the summer, I couldn’t get the proportions right, and I felt like the rhubarb flavour didn’t shine through. Totally not a problem with these peach margs, you can absolutely taste the fresh peaches that you puree and stir in with all the other usual suspects (tequila, orange liqueur) and a lemon/lime simple syrup. I think there’s still a small window of time to make these with fresh peaches before summer is through!
Peach Margaritas

Yield: 4 margs, whether you drink them all yourself is up to you!
Ingredients
1 1/4 lb ripe peaches (about 4-6, depending on the size)
1/2 cup water
2 tbsp sugar
2 oz lime juice
2 oz lemon juice
6 oz tequila
4 oz orange liqueur
Directions
- Peel the peaches, cut in half, throw out the pit, and puree in your blender (I used my immersion blender). Strain through a fine mesh strainer, and add to a pitcher.
- Add the water and sugar to a small saucepan over medium heat, and stir until sugar is dissolved. Let cool for a few minutes, then add to pitcher.
- Add the remaining ingredients to the pitcher and stir well. Taste and adjust as you see fit. Yummmmmmm!
