It was another month of hibernation over here, so once again, there’s nothing really noteworthy to record. I did order a bubble tea kit from Pluck (pictured above), and while it was a fun project, cooking the tapioca pearls is an annoyingly lengthy process (boil, steep, strain, rinse, store in simple syrup). My friend Jess and I also had a virtual bake along where we made these Chocolate Puddle Cakes together. I forgot how absolutely rich and delicious these are. Worth going to Dollarama for a couple of ramekins, as Jess did before we started. Now let’s get into my cooking recap:
- Stuff I made from the archives: BBQ Chicken Salad Bowls, Pineapple Chicken Tacos with Jalapeno Ranch Slaw
- Some of my favourite go-to dishes: Copycat Sweetgreen Caesar, Rigatoni alla Vodka
- New things that I tried and liked: Bacon Egg Cups (except I overfilled them and they made a gigantic mess in my oven), Cheeseburger Meatballs, Quinoa & Black Bean Taco Salad (this is from Cookie + Kate’s Cookbook),
- Homemade Snacks! (a new category for as long as I keep making them): Chocolate Peanut Butter Energy Balls
Other non-foodie things I was obsessed with this month:
- Early contender for best book of the year: The School for Good Mothers by Jessamine Chan. This book has strong Handmaid’s Tale vibes and is extremely weird and creepy, but I absolutely LOVED IT. I also read Love in Color this month which was fantastic, and can’t wait for Bolu’s next book coming out this summer: Honey & Spice.
- I mostly continued my ER re-watch this month, but took a break for Love is Blind Season 2 which I was OBSESSED with! I made my predictions after the penultimate episode, only to go 0/5 in the finale.
