When I need to reset a little bit, and try to get my eating in check (like say, after a full day of eating sugar), the first blog I go to for ideas is Oh She Glows. The recipes on Angela’s blog are all vegan, and I swear you feel healthier just reading them. I have a small rotation of favourites, and this dish is one of them, because I’m not one of these people who can just eat a little salad at lunch and be set for the day. Real talk: I’ll be hungry like 20 minutes later.

These Crispy Chickpea Bites are ideal, and are perfect for a lazy summer dinner as they take about 10 minutes to pull together before tossing in the oven. They’re cousins to a couple of other recipes in my archives; the Hummus Cakes from way back when, and Falafel from last spring. These ones are great because if you have a can of chickpeas in the cupboard, you’re pretty much good to go.

I like to eat these on a pile of green leaf lettuce, with whatever veggies I have lying around (up there is baby cucumber, tomato, orange pepper), and a sprinkle of feta if I have it. It’s so good with Tahini-Garlic Sauce, and the leftovers pack up well to take to work for lunch, and you can heat them up in the microwave a bit before adding them to your salad. This is a great substitute for chicken, because I have this weird thing about reheating leftover chicken. It tastes so weird right?! We can talk about that another day!

Crispy Chickpea Bites

Yield: you can shape the patties in whatever size you like, I think I got 8

Ingredients

thick slice red onion (or white onion, whatever you have around)

2 large garlic cloves

1 can chickpeas

3 tbsp flour (I like to use whole wheat flour)

1/4 tsp each cumin, ground coriander, chili powder

1/2 tsp coarse salt

black pepper

2 tbsp olive oil

Directions

  1. Preheat oven to 400, and line a baking sheet with parchment paper.
  2. This is so easy. Throw the onion and garlic into the food processor, and process until finely chopped. Throw in everything else. Process until the mixture is mostly smooth, with a little bit of texture. At this point, I usually transfer to a bowl and give everything a nice stir.
  3. Shape the mixture into little patties and place on the baking sheet. Bake for 30 minutes turning halfway through, and add to your salad.
