This post is brought to you by good old-fashioned nosiness, one of the cornerstones of the blogosphere in my opinion. Learning that Gaby is Jessica Simpson’s personal chef lead me to a flurry of clicks around her site, trying to gain more intel on what Jessica eats on a daily basis. There are lots of treats, but also a lot of healthy dishes, fresh greens and pounds of guacamole.
This is the recipe I was drawn to right away, mostly because of the cowboy factor, but also because a salad with a scoop of guacamole in the middle can’t be bad (file under: why has this never occurred to me before?). I made this as a side to some fish tacos, but it would totally stand up on it’s own. You’ve got crunchy green lettuce, cowboy caviar (corn + black beans + red peppers), a scoop of guac and a bright, fresh dressing made with cilantro, lime and honey. This is going to be my go-to salad this summer.
Cowboy Caviar Salad

Yield: Dressing is enough for 2-3 meal sized salads
Ingredients
Dressing
1/2 cup cilantro (packed)
1/4 cup grapeseed oil (my flavourless oil of choice)
2 tbsp lime juice
1 tsp honey
1/2 tsp salt
1/4 tsp pepper
Salad
– green leaf or romaine lettuce
– cowboy caviar (equal parts corn, black beans and diced red pepper – I sauteed mine in a non-stick pan for a few minutes)
– your favourite guacamole recipe
Directions
- For dressing, add everything to a blender (I used my immersion blender) and blend until smooth.
- Arrange your greens on a plate, add a scoop of guacamole to the middle, sprinkle with cowboy caviar, and drizzle with dressing.
