Well, look, I definitely went overboard with my apple picking this year. I brought home a gigantic bag of Honeycrisps, but that’s not the problem, because I ate them all in no time. The true problem was the Northern Spys, which are a great apple for baking but are way too tart to eat out of hand. They sat in my fridge for all of October, and part of November, then I finally got to work.
November was super busy for me at work, so I needed recipes that were quick and easy, but also used up a lot of apples. Enter this Cinnamon Sugar Apple Cake from Pinch of Yum. It is legit something you can mix up in 15 minutes (plus the time to peel and chop the apples), and is SO satisfying. Yes, it’s the homeliest, ugliest thing to come out of my kitchen in a long time, but no one seemed to mind. In fact, I made it TWICE this month, to great enthusiasm by family, friends and co-workers.
Lindsay from POY is also eating this warm with honey butter melting over the top, which I can confirm is next level delicious.
Cinnamon Sugar Apple Cake

Ingredients
- 1 1/2 cups brown sugar
- 1/3 cup vegetable oil
- 1 egg
- 1 cup buttermilk
- 1 tsp vanilla
- 2 1/2 cups flour
- 1 tsp baking soda
- 3 cups chopped, peeled apples
+ 1/2 cup sugar mixed with 1 tsp cinnamon
Directions
- Preheat oven to 325° and spray a 9×13″ pan with non-stick spray.
- In a large bowl, whisk together the brown sugar, oil, egg, buttermilk and vanilla until smooth. Add the flour and baking soda and whisk again. Stir in the chopped apples.
- Pour batter into the pan, and smooth out evenly. Sprinkle the cinnamon-sugar over the top, then bake for 45 minutes or until a toothpick inserted into the centre comes out clean.
