Disclaimer: I’ve never actually watched the Superbowl. However, since I watched the entire Friday Night Lights series on DVD last year, I feel like I could watch tomorrow and have at least half a clue as to what’s going on. But since there’s no Tim Riggins on the field, no Coach on the sidelines, and no Mrs. Coach in the stands, I probably won’t. That doesn’t stop me from making Superbowl snacks though!
My friend Jenn came over for a visit today, so I decided to make us a little lunch comprised of Superbowl snacks to eat as we discussed the game gossiped and watched Kardashians. We had some mini meatballs I made with extra-lean ground beef and tossed in PC Beer & Chipotle Barbecue Sauce and some potato skins topped with cheese, bacon and green onions, with sour cream for dipping. Finally, I made some Buffalo Wing Hummus, that I saw in Food Network magazine, which has some hot sauce and BBQ sauce mixed in. It was delicious scooped up with baby carrots or barbecue rice chips.
Jenn also brought me the Retro Doritos and Reese’s Peanut Butter Cup Baking Mix I saw at Target back in November! Amazing!
Buffalo Wing Hummus
Source: Food Network Magazine
Yield: about 1 1/2 cups of hummus
Ingredients
1 can chickpeas, drained, and rinsed, reserve 1/4 cup of chickpea liquid
2-3 cloves garlic
2 tbsp tahini
2 tbsp lemon juice
3/4 tsp paprika
1 tbsp barbecue sauce
1-2 tbsp hot sauce (I used Frank’s)
1/2 tbsp white vinegar
3/4 tsp salt
Directions
- Add all ingredients to your food processor, and process until smooth. Taste and add more hot sauce if you want.

February 7, 2012 3:21 pmThese sound nice and a much healthier alternative to chicken wings and pizza (but pizza was home made and on a whole wheat crust, that’s gotta count for something) we had over at our house. We enjoyed the game though and cheered for the Giants, too; it was a first ever football game for my mum and for Punchi, too 🙂
