We’re down to the last five recipes in Baked Elements, and our challenge this week is a Tunnel of Hazelnut Fudge Cake. Where’s the other half of the cake, you say?
Here it is! Despite using my non-stick bundt pan and spraying the hell out of it, my cake still got stuck! I used an offset spatula to try to loosen the sides and just hoped for the best. I got half out, and sliced the ends off for the picture up top, and then pried out the other pieces. Normally I would be excited because these are the pieces I can snack on, but I didn’t actually like it! I was shocked! The cake is super sweet (it has regular white sugar, brown sugar and a heap of icing sugar), but I didn’t find it all that chocolate-y. It has 3/4 cup of cocoa powder (and I used my deep dark cocoa), but my tastebuds were expecting something like last week’s super intense chocolate muffins. I really liked the texture as it was fudgey and chewy, but it just didn’t have the chocolate factor I was expecting.

September 29, 2014 1:17 amNot a favorite of mine, either – but my family liked it. I thought it tasted like brownies which would have been far easier to make! Hey, at least your cake held together – mine looked like “liquid hot magma!” LOL!

September 28, 2014 11:55 pmYour half-cake looks awesome! Yeah, this was a tough one for sure. I was convinced that mine was a disaster, and I think I just got lucky. Unfortunately, I shredded the nonstick coating on my cake pan with the offset spatula while trying to pry the damn thing out! I’m sorry to hear that you didn’t love it after all that! :-/

September 28, 2014 12:48 pmRobyn – well, I suppose ‘misery loves company’, so I will confess that the exact same thing happened with my cake as well! One half turned out lovely, the other stuck to the pan! LOL! I was able to pry it off and patch it up though, and thank heavens for a good sprinkling of powdered sugar, right?
I actually had the exact opposite experience than you with the chocolate flavor, though. I found it to be really nicely punched up in this cake, and way too subtle in last week’s muffins. I think it may have been because I used a double-strength vanilla in the cake this week, however – and last week’s muffins had no vanilla whatsoever (I felt the muffins really needed it). That’s what I love about the Baked Sunday Mornings forum, though – we all get different tastes and experiences and can learn from one another. It’s an interesting journey!
All of this aside, I still think the good half of your cake looks yummy. Can’t wait to meet you in almost a week! Yay! I feel like we are all old friends already!
