We had a big fundraising event at work last week, and the following day, an email went out about some leftover items for sale. I wasn’t really interested until I saw the last line: LEMONS AND LIMES FREE TO A GOOD HOME. I remembered this Lemon Lemon Loaf was on our agenda for today, and scooped up about a dozen lemons to take home.
While I’m not the biggest fan of citrus in baked goods, I do appreciate a nice lemon loaf. There’s one in the archives that uses yogurt, and now in comparison, I have to say I like the texture of this loaf, which uses sour cream, much better.
The method for mixing this up is a little different (i.e. using the food processor), but everything went well for me. I also made the lemon syrup to brush over the warm loaf, plus the lemon glaze to finish it off. This was so bright and fresh, an especially nice treat in the depth of winter.
