I am friends with the world’s biggest Cinnamon Toast Crunch fan (Exhibit A) who is ALSO the world’s biggest Rice Krispie Square fan (Exhibit B), so when this recipe popped up on my IG explore tab, I sent it to her right away. Her response was: “How many times can I like this?????” followed by multiple heart emojis and loaf of bread emojis (“There’s no toast emoji”).
Just like the Next-Level Rice Krispie Squares I made her last year, there are a lot of extra steps for a seemingly basic recipe here, but each one (making a Cinnamon Toast Crunch powder, browning the butter, adding a topping) takes it over the top.
I saved the recipe to make for her birthday, and they did not disappoint, with rave reviews from the birthday girl and everyone she shared with. I thought I might not like them because of the white chocolate on top, but that was just silly.

Ingredients
Cinnamon Toast Crunch Powder
- 60g Cinnamon Toast Crunch
Rice Krispie Layer
- 125g butter, before browning
- 300g mini marshmallows
- 1/2 tbsp vanilla
- 1 tsp cinnamon
- big pinch salt
- 100g Rice Krispies
- 80g Cinnamon Toast Crunch
- 30g Cinnamon Toast Crunch powder
- 100g mini marshmallows, tossed in 1/4-1/2 tsp cinnamon
Cinnamon White Chocolate Topping
- 250g white chocolate (not chips)
- 25g Cinnamon Toast Crunch powder
- 1/2 tsp cinnamon
- pinch salt
+ crushed Cinnamon Toast Crunch and cinnamon to garnish
Directions
- Prepare a 8×8″ square pan by lining with parchment paper and spraying with non-stick spray.
- For the Cinnamon Toast Crunch powder, add the Cinnamon Toast Crunch to a food processor or blender, and grind into the smallest crumbs possible. Set aside to use in the rest of the recipe components.
- For the Rice Krispie layer, brown the butter in a small saucepan, then add to a large microwave safe bowl. Add the mini marshmallows, and stir until melted. (Stick it in the microwave for 20-30 seconds if it needs a little help getting fully melted). Stir in the vanilla, cinnamon and salt and mix until combined.
- Stir in the Rice Krispies, Cinnamon Toast Crunch and Cinnamon Toast Crunch powder, and mix until fully combined. Stir in the mini marshmallows that have been tossed in cinnamon. Add mixture to the pan and press gently into an even layer (spray your hands with non-stick spray first to help).
- For the cinnamon white chocolate topping, add the white chocolate to a microwave safe bowl, and melt on medium power. Stir in the Cinnamon Toast Powder, cinnamon and salt, and spread into an even layer overtop of the Rice Krispie layer.
- Sprinkle crushed Cinnamon Toast Crunch and cinnamon overtop to decorate. Let set, then cut into squares.
