I have a new favourite waffle recipe that must be documented here, before I close the 164 open tabs on my phone and lose it yet again! This recipe is just as good as my OG Favourite Waffles, but uses ingredients I always have at home (i.e. no buttermilk!).
It’s quick to mix up, light and fluffy, and the perfect thing to make when you accidentally stay out until 2am on a work night and are craving delicious brunchy things on a Friday morning.
My Favourite Waffles 2.0

Ingredients
- 1 3/4 cups flour
- 1 tbsp baking powder
- 2 tbsp sugar
- 1/4 tsp salt
- 1 1/2 cups almond milk (oat or soy probably also fine here)
- 6 tbsp canola oil (avocado oil or olive oil also work)
- 2 eggs
- 1 tsp vanilla
Directions
- Preheat your waffle iron. Mine takes forever to heat up, and this batter comes together really quickly, so might as well fire it up so it’s ready to go.
- In a large bowl, whisk together the flour, baking powder, sugar and salt.
- In a medium bowl, whisk together the milk, oil, eggs and vanilla until smooth.
- Pour the wet ingredients into the dry ingredients and and whisk until just combined. Some lumps are okay.
- Make your waffles, and add whatever toppings sound good to you! Right now my fave combo is strawberries, peanut butter and maple syrup.
