I have a new favourite waffle recipe that must be documented here, before I close the 164 open tabs on my phone and lose it yet again! This recipe is just as good as my OG Favourite Waffles, but uses ingredients I always have at home (i.e. no buttermilk!).

It’s quick to mix up, light and fluffy, and the perfect thing to make when you accidentally stay out until 2am on a work night and are craving delicious brunchy things on a Friday morning.

Ingredients

  • 1 3/4 cups flour
  • 1 tbsp baking powder
  • 2 tbsp sugar
  • 1/4 tsp salt
  • 1 1/2 cups almond milk (oat or soy probably also fine here)
  • 6 tbsp canola oil (avocado oil or olive oil also work)
  • 2 eggs
  • 1 tsp vanilla

Directions

  1. Preheat your waffle iron. Mine takes forever to heat up, and this batter comes together really quickly, so might as well fire it up so it’s ready to go.
  2. In a large bowl, whisk together the flour, baking powder, sugar and salt.
  3. In a medium bowl, whisk together the milk, oil, eggs and vanilla until smooth.
  4. Pour the wet ingredients into the dry ingredients and and whisk until just combined. Some lumps are okay.
  5. Make your waffles, and add whatever toppings sound good to you! Right now my fave combo is strawberries, peanut butter and maple syrup.
