I’ve talked here before about my annoyance with recipes on TikTok and how I find it so hard to keep track of them. Did I take a screenshot of it? Did I save it on TikTok? Did I jot the ingredients down on a post-it? Who knows! Case in point, I kept losing this delicious Gochujang Salmon recipe, but finally remembered to copy it in here.

I still have lots of gochujang leftover from these cookies, and this is a delicious way to use it. My only notes are to marinate the salmon for a little while (30-60 mins) beforehand if you have time and to broil the salmon a bit at the end of the cooking time so it gets nice and caramelized. If (when?) I finally acquire an air fryer, I’m sure it would accomplish that too.

I randomly bought skewered salmon at the store, but no need to do all that extra work, just cooking filets are fine. Cashew Crunch Salad was the perfect side to go with this!

Gochujang Salmon

Ingredients

  • 2 salmon filets
  • 1/2 tsp garlic powder
  • kosher salt & freshly ground black pepper
  • 1 tbsp avocado oil
  • 1 tbsp vinegar
  • 2 tbsp gochujang
  • 1 tbsp brown sugar
  • 1 tbsp coconut aminos or soy sauce
  • 1 tbsp rice vinegar
  • 1-2 garlic cloves, grated
  • 1 tsp sesame oil

Directions

  1. Preheat oven to 400 and line a baking sheet with parchment paper or tin foil.
  2. Place the salmon on the baking sheet, and sprinkle evenly with garlic powder, salt and pepper. Drizzle avocado oil and then vinegar over top.
  3. Make the sauce by whisking the gochujang, brown sugar, coconut aminos/soy sauce, rice vinegar, garlic and sesame oil together in a small bowl. Pour over the salmon.
  4. Bake for 8-10 minutes or until done to your liking, and broil for 1-2 minutes at the end of cooking to get it nicely caramelized.
