While I’ve been going back to the office regularly since the beginning of March, last week was the official start of our ‘Phase 1 Return to Office’ plan. Not being able to bake and share treats with my co-workers has been such a huge bummer over the past two years, so I had a lot to make up for! I wanted to make something totally over the top for the ultimate back-to-work sugar rush for my teammates.

Here’s what I landed on, based on an old IG pic I’ve had saved for years:

  • Chocolate Chip Cookie Crust
  • Layer of Birthday Cake Oreos
  • Funfetti Cheesecake Filling
  • More chopped Oreos and sprinkles

This took me back to the old Slutty Brownie Craze of the early 2010s (definitely don’t feel great about that name anymore) and they were even better than I remembered. Super sweet, crunchy and creamy, plus an explosion of sprinkles. Excellent.

Funfetti Oreo Cheesecake Bars with Chocolate Chip Cookie Crust

Ingredients

Chocolate Chip Cookie Crust

  • 1/2 cup butter (1 stick), room temperature
  • 3/4 cup sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 1/4 cup flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup chocolate chips

Cheesecake Filling

  • 2 pkgs cream cheese, room temperature
  • 1/2 cup sugar
  • 2 eggs
  • 1/2 tsp vanilla
  • pinch salt

+ 1 pkg Oreos (regular, Double Stuf or Birthday Cake flavour) & rainbow sprinkles

Directions

  1. Preheat the oven to 325 and line an 8×8″ baking dish with parchment paper.
  2. For the chocolate chip cookie crust, cream the butter, white sugar and brown sugar together in a medium sized bowl. Add the egg and vanilla and mix again. Add the flour, baking powder, baking soda and salt and mix to combine. Stir in the chocolate chips. Press the dough into an even layer across the bottom of the pan.
  3. Add a layer of Oreos on top of the chocolate chip cookie dough, and press in slightly.
  4. For the cheesecake filling, beat the cream cheese with an electric mixer until smooth. Add the sugar, eggs, vanilla and salt until smooth and combined. Add a few tbsp of rainbow sprinkles and then pour over the Oreo layer and smooth with an offset spatula.
  5. Top with a few broken Oreo pieces and more sprinkles, then bake until the centre is only slightly jiggly, about 30-35 minutes.
  6. Let cool at room temperature, then chill in the fridge overnight before slicing.
