This time last year, we were in lockdown and I decided to try to find my holy grail Ginger Molasses Cookie recipe. I normally never like making the same recipe or type of recipe multiple times because I lose interest really fast, but I was bored so thought it was a good time for some trials.
My go-to was always this recipe from Gimme Some Oven; the flavour is perfect, the texture is chewy and they look so pretty with lots of crackles on top. The only problem is that the past couple of years the cookies baked up so flat and I always wanted something a bit thicker.
I wish I could tell you which recipes I tested out, but I can’t find the notes anywhere (if I even took any), and the winner in the end was still Gimme Some Oven. I can accept a thinner cookie if it still tasted great and stayed chewy (I am strongly opposed to crispy gingersnap cookies, no time for that). I swore I would never test out another Ginger Molasses cookie.
Fast forward to this year, and I was brainstorming for another Bakers Against Racism Holiday Bake Sale. No treat box around Christmas is complete without a Ginger Molasses cookie, so I was ready to make a batch of my go-to, when up popped Claire with her Holiday Molasses Spice Cookies.
I broke my own rule because obviously I had to try these out. They are fine, but curiously don’t have any cinnamon in them. I don’t know if this was the main reason I didn’t love them, but there just something missing. The texture and appearance were on point though, and they were a bit thicker than my go-to recipe. I was tempted to make another batch following Claire’s ingredients, except swapping in the spices from my go-to, but had to move on to my other three recipes for the bake sale. Maybe next year!

- Snickerdoodle Blondies (added cinnamon to the dough and sprinkled cinnamon sugar on top)
- Salted Caramel Brownies (drizzled My Favourite Salted Caramel on top and swirled it in)

Note: I ordered a gigantic 3lb box of Diamond Crystal Kosher Salt online, but if you don’t have it, just use regular salt and cut the measurement in half for these recipes.
