It’s that time again! Danielle and I have baked another 25 recipes from the Joy the Baker cookbook, and here’s our summary of the 3rd quarter.

Danielle: Toasted Coconut Dutch Baby – here she is to tell you about her fave

It has taken me this long It has taken me this long to come to terms with my lost cast iron skillet and buy a new one, FINALLY completing my Q1 and Q2 lists.  After all these months of waiting, the toasted coconut dutch baby paid off.  It is a nice and light breakfast option that whips up fast and is topped off with fresh fruit. My Mom has already requested it for Christmas morning and if there is anyway to make it unhealthy, she will think of it.  She has already asked if I can swap out the fresh fruit for whipped cream and strawberries.

Robyn: Coffee Bacon

Hands down, my favourite recipe from this quarter was the Giant Mini Chocolate Chip Marshmallow Cubes, the first and only recipe from the book that I’ve blogged about separately on the main page. Instead of repeating myself here, I’m giving the first runner-up slot to Coffee Bacon. It turned out better than I thought.  You marinate bacon overnight in a mixture of coffee grounds, molasses and spices and then roast it in the oven in the morning until it’s crispy, sticky and delicious. Bacon obviously doesn’t need anything to make it taste better, but this is neat trick if you want to mix things up!

Most Anticipated Recipe for the Final Quarter

Danielle: Crunchy Cocoa Roasted Nuts – I think these look like the perfect addition to a Christmas platter!!

Robyn: Chocolate Peanut Butter Ball Cookies, which is like a Buckeye sitting on top of a chocolate cookie. I’m picking these mostly because Dani has been commenting on how weird they look ever since we opened this book last March!

Dani and I conducted a draft for the remaining 25 recipes in the book, so they were fairly divided and we both got some yummy things and some weird things, in addition to the leftover things from our previous quarters’ Top 10s. Since it turned out that there are actually 103 recipes in the book (on the front it says there are 100 recipes), we decided to give a pass to the three recipes that we just cannot get on board with. Just one last note that we’re taking a break from the project until January, as we’re approaching serious Christmas cookie time. We’ll get back into it in the new year with a goal to have the whole book done by the anniversary of our start date. Mostly this just impacts our co-workers as they’re the ones who get to eat the outcome of this project!
