I haven’t made this for dinner in years and I’m not quite sure why, as it used to be a staple in my rotation for a long time. I actually totally forgot about it until I was at lunch with some co-workers last week and one of them mentioned how they make an “egg roll in a bowl” dish quite often with a bag of slaw mix, and this Turkey Taco Bowl zoomed to the forefront of my brain. I immediately added it to my meal plan for this week and – shocker – even remembered to take a picture of it!

I don’t know why I ever stopped making this! It’s the absolute quickest meal ever: ground chicken or turkey, taco seasoning, and a whole bag of slaw mix. DONE! Garnish with whatever taco toppings you love, stick some tortilla chips on the side, and that’s dinner in like 15 minutes. Leftovers pack and heat well for lunch for the next couple days, which is always a win for me too.

Last summer I came into the possession of a Vitamix (long story), which admittedly has been gathering dust in my closet since then. I busted it out this week to make a batch of Cashew Queso to go with these bowls, and have been using it non-stop ever since. It’s so powerful and truly gets everything SO smooth. I’ve never been a huge fan of sour cream, so having a rich, creamy, zesty sauce to drizzle over these bowls is even better than sour cream, in my opinion. I’d never pay for a Vitamix myself, but I’m so excited to keep using it now!

Turkey Taco Bowls

Ingredients

  • 1 lb ground chicken or turkey
  • 1/2 small onion, chopped
  • bag slaw mix
  • packet taco seasoning (or make your own)
  • 1/4 cup water

+ whatever taco toppings you like: cherry tomatoes, shredded lettuce, shredded cheddar, green onions, tortilla chips, queso, chopped cilantro

Directions

  1. In a large skillet, add a drizzle of olive oil over medium-high heat, then add the ground chicken and onion and season with salt and pepper. Cook until the chicken is no longer pink.
  2. Add the slaw mix, season again with salt and pepper, mix to combine, and cook for 3-4 minutes until the veggies start to soften.
  3. Add the taco seasoning and water and mix to combine. Reduce heat to low and let simmer while you prep your toppings.
  4. Add to a bowl, garnish with toppings and DIG IN.

Cashew Queso

Ingredients

  • 1 cup unsalted cashews (raw or roasted, doesn’t matter)
  • 1/2 cup water
  • 4 oz can diced green chiles
  • 2-3 tbsp nutritional yeast
  • 1-2 tbsp chipotle adobo sauce (more to taste if you want it spicy) OR 1-2 tsp chipotle chili powder OR save 1-2 tsp from your taco seasoning packet
  • 1 tsp kosher salt

Directions

  1. Add all ingredients to a high speed blender and blend until sauce is smooth. Taste and see if it needs additional salt.
