I love cornbread and don’t make it nearly enough. I have a go-to recipe (that I should actually elevate to My Favourite status here), and I tried Alison Roman’s version at some point during the pandemic. Both of those recipes are the style that I like: plain.
Claire’s recipe for Loaded Cornbread is pretty much the opposite of those recipes. It’s loaded with bacon, jalapeno, green onion and cilantro. It’s also pretty easy to mix up (once you’re done prepping all of those add-ins) and gets baked in the same skillet that you cooked the bacon in.
So what’s the verdict on this cornbread? It’s really good, it’s just not the style that I prefer. My taste-tester (Kristine) said the same thing.

Note: I ordered a gigantic 3lb box of Diamond Crystal Kosher Salt online, but if you don’t have it, just use regular salt and cut the measurement in half for these recipes.
